Puree half of the coriander with the oil, garlic and chilli pepper with a hand blender into a fine green oil. Keep separate.

Cut the avocados in half, remove the kernel and scoop out the flesh with a spoon.

Puree the pulp together with the rest of the coriander, lime juice and coconut water with a hand blender until smooth. Season with salt and pepper and serve in deep plates.

Pour in a jet of coriander oil and a dash of yogurt and sprinkle the avocado soup with the pumpkin seeds.
