Check the mussels. Remove open mussels that do not close to the work surface after a tap. Preheat the oven to 220ºC or switch on the oven grill.

Boil the mussels with the spring onions and wine covered for 6-7 minutes until the shells are open.

Remove the mussels from the pan. Remove one shell half, remove the mussels from the shell and put them back in the shells.

Grind the bread with the lemon zest, juice, pesto, garlic and olive oil into a thick paste. Divide this pasta over the mussels and sprinkle with the cheese.

Sprinkle a baking sheet with a layer of coarse sea salt and place the mussels on top. Grate for about 8 minutes in the oven or 2-3 minutes under the grill.
