Avocado soup with surimiflakes and spicy crème fraîche


A tasty recipe. The starter contains the following ingredients: fish, chicken stock, avocados, lemon, crème fraîche with fresh herbs (125 ml), ginger syrup, surimiflakes (125 g), stoneleeks (bag of 8 pieces), salt and (freshly ground) black pepper.

Directions

  1. Bring 8 liters of water to the boil.
  2. Top up the bouillon tablets.
  3. Meanwhile, peel, halve and remove avocados.
  4. Squeeze out the lemon.
  5. Cut the fruit flesh and sprinkle with lemon juice.
  6. Stir in avocado, crème fraîche and ginger syrup through stock.
  7. Return soup to boil and purée with hand blender.
  8. Soup the soup over low heat for about 2 minutes.
  9. Season with salt and pepper.
  10. Meanwhile, halve surimiflakes and cut stoneleeks into the rings.
  11. Distribute avocado soup over four bowls or deep plates.
  12. Place surimiflakes on top and sprinkle with stoneleeks..
