Baked beans with fried egg


A tasty recipe. The vegetarian breakfast contains the following ingredients: olive oil, red onion (in rings), Provençal herbs, peeled tomatoes (400 g), Spanish giant beans ((400 g), drained), French baguette, eggs, flat parsley ((a 20 g ) and leaves finely chopped).

Directions

  1. Preheat the oven to 200 ºC. Heat 1 tbsp oil in a frying pan and fry the onion for 3 min. Add the herbs and tomato and bring to the boil. Push the tomatoes with a ladle piece. Leave to cook for 10 minutes on low heat. Add the beans and warm for another 5 minutes. Season with salt and pepper.
  2. Meanwhile, bake the bread in the oven according to the instructions on the package. Heat the rest of the oil in a large frying pan and fry 4 fried eggs.
  3. Sprinkle the baked beans with the parsley. Serve with the egg and bread.
