Make sure all ingredients are at room temperature.

Mix the egg yolks with 1-2 teaspoons of mustard and a pinch of salt in the bowl of a food processor or use a blender with a mixing beaker. Beat everything light yellow and creamy.

Add 2 tablespoons (white wine) of vinegar and, in a thin stream, carefully add the sunflower or olive oil while beating (or while the machine is running).

If about half of the oil is absorbed and the mayonnaise thickens, you can add the oil a bit faster. Season with pepper.
