Basic recipe fresh tomato soup
The basis of every fresh Italian tomato soup with shallots, garlic and red wine.
Uncrumble the tomatoes and cut into pieces. Chop the onion and finely chop the garlic.
Heat the oil in a frying pan. Fry the shallots and garlic gently in 3 minutes.
Add the tomato pieces and the sugar and cook for another 4 minutes. Add some ground pepper.
Pick the leaves oregano from the twigs and mix half by the tomato sauce.
Make the stock with the tablet according to the instructions on the package. Add the wine and warm stock and bring to the boil.
Turn down the heat and let the soup simmer for 30 minutes. Stir occasionally.
Season with salt and pepper and spread the soup over deep plates.
Sprinkle the rest of the oregano over the soup.
