Directions

  1. Dab the meat dry with kitchen paper for a nice brown crust and sprinkle to taste with salt and pepper.
  2. Heat the butter in a thick-bottomed frying pan. Let the butter become hot, wait until the foam dries and the butter is golden brown.
  3. Put the steaks in the pan and keep them moving over the bottom of the pan. Use a kitchen tongs and do not pierce the meat. Bake the steaks for about 3 minutes. Turn the heat source a little lower if the butter turns brown. Turn the meat over and bake for a 'medium' steak for another 2-3 minutes.
  4. Let the meat rest for a while under aluminum foil. The meat juices are distributed over the meat and the meat remains tender.
  5. Add a dash of wine, water or cream to the shortening and stir well to a gravy.
