A tasty recipe. The vegetarian appetizer contains the following ingredients: olive oil, red onions (in half rings), sugar, red wine vinegar, mascarpone (soft cream cheese, 250 g), flour, eggs, semi-skimmed milk, basil ((15 g), leaf chopped) and butter .

Heat the oil in a pan and simmer the onions with the sugar and vinegar for 20 minutes on low heat with the lid on the pan. Allow to cool. Drain, keep some of the cooking liquid. Stir the mascarpone through the onions. Add some of the cooking liquid if necessary. Season with salt and pepper. Leave to set in the refrigerator for 20 minutes.

Make a thin pancake batter of the flour, eggs, milk and a pinch of salt. Add the basil and mix through the batter.

Heat some of the butter in a frying pan with a non-stick coating and cook as thin as possible. You can make about 8 of the batter. Spread the onion mascarpone mixture over the flanges and roll them up. Leave to stir for 10 minutes in the refrigerator. Cut them into oblique rolls of 2 cm wide. Insert a cocktail stick in each roll.
