Bean salad
Salad from broad beans, garden peas, string beans and white beans

Cut the onion into rings. Mix with the vinegar and leave for 15 minutes. Remove the onion and store the vinegar.

Meanwhile, bring 2 pans with water to the boil. Cook the garden peas for 1 minute and rinse with cold water.

Cook the broad beans for 4 minutes and rinse with cold water (blanch). Keep separate.

Slice the garlic. Cut the string beans into thin strips. Drain the white beans in a colander and rinse under cold running water.

Heat the oil and fry the garlic for 2 minutes. Add the haricot beans and wine and fry the beans in 10 min. Until al dente.

Add the white beans, garden peas and broad beans and heat for a while. Season with pepper and salt.

Slice the parsley. Mix through the salad.

Mix the onion and season with the vinegar. Sprinkle with the extra virgin oil.
