Beans with endive and white cheese cubes
A tasty Dutch recipe. The side dish contains the following ingredients: fine broad beans (300 g, frozen), fresh peas (200 g), lemon (scrubbed), liquid honey, extra virgin olive oil, mint (a 15 g), endive (in strips) and white cheese cubes (pack of 200 g).

Bring a pot of water to the boil and cook the frozen green beans for 8 minutes. Cook the peas for the last 4 minutes. Drain and let cool for 5 minutes.

Meanwhile, cut the yellow skin of the lemon, cut into strips and squeeze out the fruit. Mix the grater and juice with the honey and beat 3 tbsp oil. Cut the fresh mint coarsely, add 3/4 of it and season with salt and pepper.

Put the beans, peas and dressing in a bowl and add the endive. Crumble the cheese over it. Sprinkle with the rest of the fresh mint and drizzle with the rest of the oil. Serve immediately.
