Directions

  1. Cut the ribs into coarse pieces. Season the meat with the paprika, cinnamon, cumin and salt and freshly ground black pepper and fry the pieces in a casserole with olive oil in 4-6 minutes brown.
  2. Meanwhile cut the garlic into slices.
  3. Spoon the slices of garlic and tomato paste through and fry for 1-2 minutes. Pour in the stock and bring the liquid to the boil.
  4. Cook the meat covered for 2 hours on very low heat (if necessary on a flame distributor).
  5. Peel and cut the potatoes into cubes of 3 cm. Spoon the stew vegetables and potatoes through the moisture and simmer the meat and vegetables for another 20-30 minutes.
