Steamed salmon fillet with cucumber
A tasty Dutch recipe. The main course contains the following ingredients: fish, lime, (diet) margarine, red pepper (finely chopped), fresh coriander (a 15 g finely chopped), cucumber, salmon fillet and chili sauce.

Lime brooms, peel grate and lime squeezer. Mix in a margarine bowl with half of lime zest, 1 tbsp lime juice, red pepper and half of coriander. Leave to harden in refrigerator for about 30 minutes.

Bring a layer of water to the boil in a (steam) pan. Peel cucumber and halve in length. Scrape out with teaspoon seeds and cut cucumber into pieces. In a bowl, mix cucumber with 1 tbsp lime juice, rest of lime zest and coriander. Distribute over bottom of steam basket. Divide salmon fillets into 4 equal pieces. Rub salmon with salt and pepper and brush with chili sauce. Put salmon on cucumber. Hang the steam basket in the steam pan and put the lid on. Season the salmon and cucumber for about 10 minutes. Spread cucumber and salmon over four plates. Gently add herb butter to salmon. Serve with multigrain rice and carrot salad.
