Beef strips with stewed eggplant


A nice Mediterranean recipe. The main course contains the following ingredients: meat, aubergines, onion, garlic, olive oil, brown rice (400 g), peeled tomatoes, capers, sugar and beef strips (about 350 g).

Directions

  1. Clean aubergines and cut into cubes.
  2. Peel and chop onion and garlic.
  3. Fry 4 tbsp oil in frying pan and fry eggplant, onion and garlic for 10 minutes.
  4. Cook the rice according to the instructions for use.
  5. Add tomatoes, 2 tbsp capers and sugar to eggplants and stew for another 10 minutes.
  6. Heat residual oil in frying pan and fry beef strips in 4 min.
  7. Season with salt and pepper.
  8. Scatter leftovers of capers over eggplant mixture.
  9. With rice and beef strips serve..
