Beef strips with stewed eggplant
A nice Mediterranean recipe. The main course contains the following ingredients: meat, aubergines, onion, garlic, olive oil, brown rice (400 g), peeled tomatoes, capers, sugar and beef strips (about 350 g).

Clean aubergines and cut into cubes.

Peel and chop onion and garlic.

Fry 4 tbsp oil in frying pan and fry eggplant, onion and garlic for 10 minutes.

Cook the rice according to the instructions for use.

Add tomatoes, 2 tbsp capers and sugar to eggplants and stew for another 10 minutes.

Heat residual oil in frying pan and fry beef strips in 4 min.

Season with salt and pepper.

Scatter leftovers of capers over eggplant mixture.
