Beetroot stew with bacon and apple
Stew of crumbly potatoes, boiled beetroot, onion, smoked bacon and apple.

Peel the potatoes and cut into equal pieces. Boil in water with salt if necessary for 20 minutes.

In the meantime, heat the butter in a frying pan and fry the bacon strips in 6 minutes.

Add the onion and cook for 4 minutes.

Add the onion to the bacon and cook for 1 min.

Meanwhile, peel the beetroot and cut into cubes.

Bake for 4 minutes with the bacon mixture.

Cut the unpeeled apple into quarters and remove the core. Cut the quarters into pieces. Scoop through the beet mixture.

Drain the potatoes and collect some cooking liquid.

Stamp the potatoes with the butter and the cooking liquid with the puree pestle to a smooth puree.

Scoop the beet mixture through. Season with pepper and salt.
