Directions

  1. Preheat the oven to 160 ° C. Grind the almond in the food processor. Add the icing sugar and flour and grind briefly. Beat the egg whites with 60 g of sugar. Fold in the almond mixture and the berries. Divide this over a baking sheet covered with parchment paper in a rectangle of approx. 35 x 30 cm. Fry in about 20 minutes until golden brown and done. Allow to cool slightly, remove the parchment paper and allow to cool completely.
  2. Grate the yellow skin of the lemon in the meantime and squeeze out the fruit. Melt the butter in a saucepan. Add 3 egg yolks, lemon zest, juice and the rest of the sugar. Heat over low heat to a smooth and thick sauce, stir constantly. Allow to cool.
  3. Stick out of the dough with a glass of 16 rounds. Beat the whipped cream until stiff. Brush the circles with the lecurd, a tuft of whipped cream and put another round on it. Dust light with powdered sugar.
