Toast the slices of bread in the toaster or grill pan golden brown on both sides. Cut the chives finely. Mix in a bowl the cottage cheese with two thirds of the chives and some freshly ground black pepper.

Place 2 slices of bread on each plate and brush them with the cottage cheese. Place a slice of roast beef on each slice.

Heat the butter in a frying pan and break the eggs above without breaking the egg yolks. Fry the eggs over medium heat until the egg white has solidified and the yolk is still liquid. Place the eggs on the slices with roast beef. Sprinkle some chives.
