Heat the olive oil and fry the spring onions. Add the iceberg lettuce bars and cook at a low setting for 5 minutes.

Add the broad beans and the stock and heat for about 7 minutes at a high setting, until the stock has almost evaporated.

Add lemon zest and juice and serve immediately.
