Directions

  1. Preheat the oven to 200 ° C.
  2. Cut the butter into cubes and chop the chocolate into pieces.
  3. In a pan with a thick bottom, bring the water to the boil with the butter and the salt. Let the butter melt.
  4. Once the butter has melted, add the flour and stir with a wooden ladle until a dough ball is formed. Remove from heat and allow to cool slightly.
  5. Stir the eggs one by one through the dough. Keep stirring until a firm and shiny dough is created.
  6. With a wet spoon, spoon 8 pieces of dough onto a baking sheet covered with parchment paper. Keep 5 cm of space between the mountains.
  7. Bake the puffs in the middle of the oven for 25-30 minutes. Do not open the oven in the meantime, to avoid collapsing.
  8. Turn the hot puffs carefully with a oven mitt and prick with a knife a 1 cm in the bottoms.
  9. Put them on the head back on the baking sheet in the oven. Turn the oven off and let it dry for another 5 minutes. Then let them cool for 10 minutes outside the oven.
  10. In a bowl, beat the whipped cream with the vanilla sugar and whipped cream stiffener. Put the whipped cream in the piping bag.
  11. Fill the puffs through the holes with the whipped cream.
  12. Heat the rest of the cream with the chocolate until the chocolate has melted.
  13. Brush the puffs with the chocolate glaze and let it harden.
