Sift the flour over a bowl and mix in the baking powder, salt, sugar and herb mix.

Cut the butter into cubes and knead together with the buttermilk through the flour mixture into a cohesive dough. Knead for 5 minutes.

Roll up a ball and push flat. Wrap in cling film and let rest 30 minutes in the refrigerator.

Preheat the oven to 160 ˚C.

Roll the dough in three parts on a floured sheet to a thickness of 0.5 cm.

With the protrusion mold, cut out about 20 biscuits. Place on a griddle covered with parchment paper.

Beat the egg and brush the cookies with it. Bake golden brown and crunchy in the bottom of the oven for about 40 minutes.

Remove the baking sheet from the oven and allow the cookies to cool completely.
