Breaded bacon patties with beet gratin

Halve the bacon patties and sprinkle with salt and pepper. Mix the mustard with 2 tablespoons of olive oil and brush the meat with this mixture.

Remove the bacon slices through breadcrumbs. Pan thick and press well.

Heat the butter and fry the bacon for 3-4 minutes. Turn around once and bake the other side for about 3 minutes.

Spoon the beetroot with the spring onions into a bowl. Season with salt and pepper and pour in the balsamic vinegar and the rest of the olive oil. Sprinkle with the goat's cheese.

Place the beets covered for 4-5 minutes at 800 Watt in the microwave, or uncovered for 10-15 minutes in the oven at 180ºC, until the cheese has melted. Serve the beet gratin with the bacon.
