Grind the tofu with the eggs, milk and honey in a food processor or blender. Roast the kernels, hazelnuts and coconut in a dry, hot frying pan until the mixture smells.

Scoop this through the egg mixture. Heat the butter in the same frying pan until it is full and pour in the egg mixture, possibly in 2 parts. Allow to solidify to a thick omelette, cut through and serve immediately.

Delicious with fruit, a bit of grated coconut and a stream of honey.
