Broccoli soup with bacon

Put 2 slices of bacon separately and cut the rest into pieces. Chop the onion, cut the celery into pieces, peel the potatoes and cut them into pieces. Cut the broccoli into florets.

Melt the butter and fruit the onion and celery on low heat for 5 minutes. Add the pieces of bacon and potato and cook for 5 minutes on low heat. Pour in the stock, bring to the boil and cook for 15 minutes.

Add the broccoli and cook again for 10 minutes. Puree the whole with the hand blender. Taste and season with salt and pepper. Put the soup back on the fire and keep warm.

In the meantime, cut the 2 separated slices of bacon in half and fry until golden brown and crispy in a small frying pan. Serve the soup in bowls, with a spoon of ricotta in it and garnished with crispy bacon.
