Stuffed cherry peppers from the oven
A tasty Spanish recipe. The starter contains the following ingredients: meat, onion, garlic, zucchini, red pepper, cherrypaprika, fresh parsley, veal minced, pine nuts, salt, freshly ground black pepper, olive oil and tomato cubes (400 g).

Preheat oven to 175 ° C or gas oven 3.

Peel and chop onion.

Peel and squeeze garlic.

Clean zucchini, halve in length and cut into slices.

Wash red pepper, remove seed and cut into thin rings.

Cherpy peppers clean, halve and remove seeds.

Wash and chop parsley.

In bowl, mix veal minced beef with 2 tablespoons of onion, half of garlic, pine nuts, salt and pepper.

Fill cherries with minced meat.

Fry olive oil in frying pan and gently fry the remaining onion and garlic for about 3 minutes.

Add red pepper and tomato cubes to onion mixture and cook until creamy tomato sauce in about 5 minutes.

Season the sauce with salt and pepper.

Divide tomato sauce, zucchini and stuffed cherry peppers over the baking dish and let the vegetable dish cook in the oven for about 20-25 minutes.

If sauce becomes too thick, add some water in the meantime.

Warm vegetables garnish with parsley and serve with coarse cuts of bread..
