Directions

  1. Fry the onion in a few tablespoons of oil and add the carrot cubes.
  2. Add the vegetable stock and cook for about 10 minutes until the carrot is soft enough to puree.
  3. Puree the soup with a hand blender and season to taste.
  4. Sprinkle with fresh curled parsley and serve with breadstick sticks (see tip).
