Directions

  1. Additional requirements: hand blender.
  2. Cut the spring onions into rings and the cheese into small cubes.
  3. Melt the butter in a soup pan and fry the spring onions for 1 minute.
  4. Stir in the peas and pour in the stock.
  5. Bring to the boil while stirring and simmer for 2-3 minutes.
  6. Add the basil and puree everything with the hand blender until smooth.
  7. Add some salt and pepper and warm for a while.
  8. Spoon the soup into bowls or deep plates.
  9. Garnish with the cubes of cheese and then a tuft of basil.
