Additional requirements: hand blender.

Cut the spring onions into rings and the cheese into small cubes.

Melt the butter in a soup pan and fry the spring onions for 1 minute.

Stir in the peas and pour in the stock.

Bring to the boil while stirring and simmer for 2-3 minutes.

Add the basil and puree everything with the hand blender until smooth.

Add some salt and pepper and warm for a while.

Spoon the soup into bowls or deep plates.
-
Garnish with the cubes of cheese and then a tuft of basil.
