Spicy rice salad with mango and peanuts

Boil the rice, drain and let spread cool. Heat 1 tablespoon of oil in a frying pan or stir fry the red pepper with the ketjapmarinadeen peanuts for 1-2 minutes at a low setting.

Spoon the fried peanuts with the spring onions and mango through the rice.

Mix the lime juice with the caster sugar and ginger and whisk in the rest of the oil. Scoop this dressing through the salad. Serve this spicy rice salad with mango and peanuts with krupuk.
