Directions

  1. Heat the chicken stock in a soup pot. Add the chopped bok choy, ginger powder, cucumber cubes and Chinese cabbages. Cook for 2 minutes.
  2. Stir in coconut milk, bean sprouts, shrimp, sambal oelek and lemon juice through the soup. Scoop the hot soup into bowls.
  3. Divide the strips of chicken fillets over the bowls and sprinkle coriander or parsley on them.
