Broccoli soup with raw ham
French soup with broccoli, crème fraîche, raw ham and basil.

Heat the water with the bouillon tablets in a soup pot.

Cut the stalk of the broccoli into pieces and cut the rest into florets.

Boil the stalk for 5 minutes in the stock, add the florets and cook for 8-10 minutes.

Remove the pan from the heat and puree with the hand blender until smooth.

Melt the butter in another large pan and add the flour while stirring and stir well. Let the mixture be cooked in low heat for 5 minutes.

Add the broccoli soup and crème fraiche, stirring. Let it simmer for 5 minutes.

Cut the ham into pieces. Heat the oil in a frying pan and fry the ham for 4 minutes.

Tear the leaves of the basil into pieces.

Add the ham to the soup together with the basil leaves. Season to taste with pepper and stir.
