Broccoli soup with smoked salmon
Heat the olive oil in a thick-bottomed soup pan and fry the onion until it is glazed.
Add the broccoli florets and vegetable stock and cook for about 10 minutes at a low setting.
Remove the pan from the heat source and puree with a hand blender until smooth.
Add the herb cream cheese and stir well.
Add the smoked salmon and season the soup with salt and pepper.
Garnish with some parsley.
Use a skewer and some crème fraîche to make a Christmas shape in the soup (see tip).
