Broccoli soup with smoked salmon

Directions

  1. Heat the olive oil in a thick-bottomed soup pan and fry the onion until it is glazed.
  2. Add the broccoli florets and vegetable stock and cook for about 10 minutes at a low setting.
  3. Remove the pan from the heat source and puree with a hand blender until smooth.
  4. Add the herb cream cheese and stir well.
  5. Add the smoked salmon and season the soup with salt and pepper.
  6. Garnish with some parsley.
  7. Use a skewer and some crème fraîche to make a Christmas shape in the soup (see tip).
