Directions

  1. Bring a large pot of water with salt to the boil. Heat 2 tablespoons of oil in a frying pan and fry the bread cubes on both sides until golden brown.
  2. Scoop the bread cubes out of the pan and roast the walnuts in the same pan in a few minutes crisp.
  3. Blanch the broccoli florets in the boiling water for about 3 minutes.
  4. Put the broccoli in a bowl and spread the walnuts, croutons and cheese over it and drizzle with the rest of the oil. Grind a little pepper and serve immediately.
