Bring a large pot of water with salt to the boil. Heat 2 tablespoons of oil in a frying pan and fry the bread cubes on both sides until golden brown.

Scoop the bread cubes out of the pan and roast the walnuts in the same pan in a few minutes crisp.

Blanch the broccoli florets in the boiling water for about 3 minutes.

Put the broccoli in a bowl and spread the walnuts, croutons and cheese over it and drizzle with the rest of the oil. Grind a little pepper and serve immediately.
