Start with the filling. Heat the vanilla juice with the whipped cream to the boil.

Melt the white chocolate. Allow the filling to cool and set in the refrigerator.

Preheat the oven to 170ºC.

Beat the egg whites lightly in a fat-free bowl. Add 225 grams of sugar and beat until the egg whites are stiff.

Fold in the rest of the sugar, the almond flour and the flour. Put this batter in a piping bag.

Spray around 24 strips of batter 8-10 cm long on the baking tray. Sprinkle with the almond shavings and bake for 18-20 minutes in the middle of the oven.

Take the baking paper with the biscuits from the baking sheet and allow to cool.

Scoop the filling from the refrigerator into a piping bag. Pipe a stripe of filling on half of the biscuits and place a second cookie on it.

Melt the dark chocolate in the microwave for 1-2 minutes at 400 Watt. Dip the ends of the cookies in the chocolate and allow to harden.
