Directions

  1. Preheat the oven to 200ºC. Put the pudding molds in an oven dish.
  2. Beat the eggs with the egg yolk, 25 grams of sugar, 1 teaspoon lime zest and the lime juice into a foamy mixture and whisk the milk through.
  3. Divide this mixture over the pudding molds and pour boiling water into the dish until the two-thirds molds stand in the water. Carefully slide the dish into the oven and fry the puddies for about 1 hour.
  4. Remove the molds from the bowl and allow to cool. Then put in the refrigerator and let it get cold through and through.
  5. Sprinkle each puddink with 1 tablespoon of sugar and burn it with a gas burner or under the oven grill to a dark brown caramel. Garnish the caramel pudding with lime, possibly with edible flowers (eg violets).
