Place the carpaccio on the plates.

Prepare the sauce by mixing the mayonnaise, the whipped cream, the lemon juice, the mustard, the cognac and the white pepper. Drip some sauce over the 6 portions.

Garnish with a few leaves of arugula, some shaved Parmesan cheese and some pine nuts.
