Prawns with mandarin dressing

Heat 1 tbsp oil in a frying pan. Fry the prawns for 2 minutes. Divide the watercress into 4 plates. Put the shrimps on it.

Squeeze the mandarin. Beat the juice with the cardamom and the rest of the oil into a sauce. Season with salt and pepper.

Drizzle the salad with the dressing. Cut the coriander above it.
