Carpaccio of zucchini with mint
A tasty recipe. The starter contains the following ingredients: courgettes, lemon (scrubbered), extra virgin olive oil, fresh mint (finely chopped) and fresh goat's cheese.

Wash the courgettes and scrape them into thin slices lengthwise. Sprinkle the slices with some salt and leave them for 20 minutes.

Grate the yellow skin thinly from the lemon and squeeze out the fruit. Beat in a bowl a dressing of the grated peel, 1 tbsp lemon juice and the olive oil. Season with salt and pepper and scoop the fresh mint through the dressing.

Rinse the zucchini slices carefully with cold water. Dab dry with kitchen paper. Arrange the slices on 4 plates, cover them with cling film and store them in the refrigerator until use.

Allow the zucchini slices to reach room temperature in about 30 minutes. Drizzle the dressing over the carpaccio of zucchini and crumble the goat cheese above it. Grind a little extra pepper. Delicious with warm ciabatta bread.
