Roast the pine nuts golden brown in a dry frying pan. Leave to cool on a plate. Beat in a bowl of vinegar and oil to a dressing. Season with pepper and salt.

Cut the arugula into large pieces. Spoon the arugula and 1el dressing in a bowl. Spread the carpaccio on the plates. Grind pepper and salt above it. Sprinkle with dressing.
