Ingredients
- 225 g self raising flour
- 1 tl baking powder
- 2 tl biscuit and speculaas spices
- 1 mespoint salt
- 200 g light brown caster sugar
- 3 medium sized egg
- 150 ml sunflower oil
- 500 g winter carrot
- 95 g peeled pistachio nuts tray
- 185 g cream cheese natural tray
- 150 g powdered sugar
- 1 lime cleaned up

Directions

Preheat the oven to 180 ºC.

Line the brownie mold with baking paper.

Sift the flour and the baking powder over a bowl. Add the herbs and the salt.

Put the caster sugar, eggs and oil in another bowl and beat with a mixer for 3 minutes.

Peel and grate the winter carrot. Add the carrots, pistachio nuts and the sieved flour to the egg mixture.

Spoon the batter into the brownie shape. Bake the carrot cake in the middle of the oven for about 45 minutes. Allow to cool to room temperature in about an hour.

Mix together the cream cheese and the icing sugar.

Grate the green skin of the lime and squeeze out the fruit. Stir the juice through the glaze and brush the cake with it.

Sprinkle the cake with the lime zest and cut into 16 pieces. Yummy! .
