Sift the flour over a bowl and mix in the granulated sugar and the vanilla sugar.

Cut the butter into cubes and put them in the bowl. Cut two knives crosswise through the flour mixture, until the butter pieces are very small.

Split the egg and add the yolk to the flour mixture.

Knead the mass with a cool hand quickly into a cohesive dough. Form a dough ball and place it wrapped in plastic wrap, 30 minutes in the refrigerator.

Sprinkle the work surface and rolling pin with flour and roll out the dough into a 5 mm thick piece.
