Homemade donuts with an icing of icing sugar and blue and red coloring.

Directions

  1. Heat the milk in a saucepan until lukewarm. Put the milk, yeast and sugar in a bowl and leave for 4 minutes.
  2. Meanwhile, mix the rest of the sugar, the flour and the salt in a large bowl.
  3. Split the eggs, the proteins are not used.
  4. Add the egg yolks, the rest of the milk, the yeast mixture and the butter (at room temperature) to the flour mixture and knead together.
  5. Knead for another 5 minutes on a floured sheet to form a soft and supple dough. Put it in a greased bowl.
  6. Cover with a damp clean tea towel and let rise in a warm place for 1½ hours.
  7. Roll out the dough on a floured sheet to a 1 cm thick sheet. Cut out circles with the portioning ring.
  8. Make small holes in the middle of the circles with the nozzle. Repeat until the dough is empty.
  9. Place the donuts on a greased baking tray. Cover with a piece of baking paper and let rise for another 30 minutes.
  10. Heat the oil in the fryer to 180 ° C.
  11. Fry the donuts per 3 in approx. 2 minutes golden brown. Scoop out of the pan, drain on kitchen paper and allow to cool.
  12. Make the glaze. Mix the water with the icing sugar and spread over a flat plate.
  13. Spread a few drops of the red and blue dyes on the glaze and mix with a fork until you get the desired marbled effect.
  14. Dip the top of the donuts into the glaze. Remove the donuts and let them drip before you turn them over.
  15. Add a few drops of red and blue dye each time the donuts become too light.
  16. Sprinkle with the pear sugar.
