Letter sand cookies with lemon
Homemade shortbread in the form of letters with lemon.
Put the butter, caster sugar and flour in the food processor and mix into dough crumbs. Clean the lemon and grate the yellow skin above the dough.
Remove the dough from the bowl and knead briefly into a cohesive dough ball. Pack in cling film and let the dough rest for 60 minutes in the refrigerator.
Preheat the oven to 175 ° C. Sprinkle the worktop with some flour and roll the dough in parts to 3-4 mm thick.
Put letters out of the dough using protrusions.
Knead the leftover dough into a ball and put it back in the fridge wrapped in foil.
Place the cookies with a few centimeters in between on a baking sheet covered with parchment paper.
Bake in the oven for about 8 minutes. Allow to cool. Repeat with the rest of the dough.
