Carrot salad with ginger and pistachio nuts
A tasty recipe. The vegetarian side dish contains the following ingredients: pistachio nuts (peeled (a 95 g)), ginger (on sunflower oil (jar 135 g)), white wine vinegar, extra virgin olive oil, sugar, winter carrot ((1 kg), coarsely grated), coriander ((15 g) and leaf chopped).

Roast the pistachios in a frying pan without oil or butter for 3 minutes. Allow to cool on a plate.

Make a dressing of the ginger, vinegar, oil and sugar in a bowl. Add the carrot and coriander and scoop. Season with salt and pepper. Sprinkle with the pistachio nuts.
