Artichokes in sherry marinade
A tasty recipe. The vegetarian side dish contains the following ingredients: artichoke hearts (a 400 g drained), extra virgin olive oil, garlic (sliced), dry sherry, red wine vinegar and fresh parsley (30 g finely chopped).

Halving artichoke hearts.

Heat half of oil in frying pan with non-stick coating.

Artichoke hearts 3-4 min.

Gently bake until they start to color.

Rub in garlic and fry for another minute.

Add sherry and gently swirl everything until sherry is almost completely evaporated.

In shell dressing beat vinegar, leftover oil and salt and pepper to taste.

Add artichokes and casserole, allow to cool for approx.

30 minutes.

Parsley mix through.

Serve immediately or keep covered at room temperature until use..
