Homemade barbecue sauce made from dark caster sugar, ketchup, cider vinegar and tabasco.

Light the barbecue.

Put the caster sugar, ketchup, cider vinegar and tabasco in a saucepan and bring to the boil. Let it boil gently for 5 minutes.

Slide the hot coals to one side of the barbecue.

Pour the sauce into the aluminum disposable container and place it on the barbecue grill above the part where there is no coal (indirect).

Sprinkle a hand of smoke wood chips on the hot coals and close the lid. This way the sauce can further reduce and gives a smoke flavor.

Remove the sauce from the barbecue after approx. 30 min., Or until you have the desired sauce thickness.
