Start with the cooking pears. You do not use all the pears for this recipe. Peel the pears and let the stalks sit on them. Put them upright in a pan in which they fit well without falling over.

Add the rest of the ingredients and pour in enough water that the pears are just below. Bring to the boil and then put the lid on the pan. Stew the pears on a low setting in soft and red for about 3 hours.
