Casserole with onion and bacon
Potatoes, egg, onion, bacon, provencal herbs and cheese from the oven.

Preheat the oven to 200 ºC.

Cut the onion into rings and the breakfast bacon into pieces.

Bake the bacon in a large frying pan for about 3 minutes.

Add the onion and cook gently for about 10 minutes. Scoop the herbs through.

Beat the eggs with the cream and the cheese. Season with salt and pepper.

Grease the oven dish. Put the potato slices in the mold.

Remove the onion mixture from the heat. Mix in the egg mixture. Distribute over the potato slices.

Fry the dish in about 25 minutes until golden brown and done.
