Cauliflower couscous with mackerel


Couscous made from cauliflower, made in the food processor, with garlic, cumin, orange, parsley and spring onions. Nice and fresh with pomegranate and smoked mackerel.

Directions

  1. Divide the cauliflower into florets. Grind to the size of couscous grains in the food processor.
  2. Slice the garlic. Heat the oil in a frying pan and fry the cumin seeds and garlic for 1 min on medium heat. Remove the pan from the heat.
  3. Mix with the cauliflower couscous in a flat dish. Let alone until use.
  4. Clean the orange, grate the orange peel off and press out 1 half.
  5. Cut the parsley finely and the spring onion in rings.
  6. Mix the orange zest, per person 2 tbsp orange juice, the parsley and spring onions through the cauliflower couscous. Season with pepper.
  7. Break the mackerel into large pieces and spread with the pomegranate seeds over the couscous. Sprinkle with pepper.
  8. Cut the baguette into slices and serve with the hummus and cauliflower couscous.
