Cauliflower mousse with roasted sesame

Heat the butter and fruit the shallots in soft and light brown for about 5 minutes.

Add the cauliflower and stir-fry for about 5 minutes at low setting.

Pour the cream and let it boil. Let the cauliflower in the cream al dente in about 10 minutes.

Season well with salt and pepper and puree everything into an airy and smooth mousse. Spoon half of the sesame through the mousse.

Spread the warm mousse over the glasses, sprinkle with the rest of the sesame and garnish with coriander.
