Cauliflower pizza with mozzarella and raw ham

Directions

  1. Preheat the oven to 180ºC. Grind the cauliflower in a food processor into crumbs.
  2. Spread the cauliflower crumbs over a baking tray and roast them in the oven for about 20 minutes. Spoil a few times in between.
  3. Let the cauliflower crumbs cool, scoop them on a tea towel and squeeze out all the moisture.
  4. Mix the cauliflower with the Parmesan cheese and the egg. Season with a pinch of salt.
  5. Line a baking sheet with parchment paper and make 2 smooth bottoms of the mixture.
  6. Bake the bottoms in the oven in about 20 minutes until golden brown and crunchy. In the meantime, mix the sieved tomatoes with the garlic and oregano and season with salt and pepper.
  7. Spoon some tomato sauce onto the pizza crusts and top with the raw ham, to and mozzarella. Fry the pizzas for about 10 minutes until the mozzarella is melted. Sprinkle with the arugula and drizzle with some olive oil. Serve immediately.
