Heat the olive oil in a soup pot. Fry the onion and garlic 2-3 minutes. Add the cauliflower florets and bake them for 1 minute, without coloring them brown. Pour in the vegetable stock and simmer for 8-10 minutes.

Purée the soup and stir in the crème fraiche, lemon juice and rack. Season with salt and pepper.

Sprinkle the soup with the pistachio or cashew nuts.
