Cauliflower soup with spices and ginger

Heat the oil in a soup pot and fry the onion a few minutes. Add the spices, ginger and garlic and fruit on a low setting for 1 minute.

Add the cauliflower florets and stock and simmer with the lid on the pan for about 15 minutes.

Puree the soup with a hand blender and add the cooking cream. Cook gently for a few minutes and season to taste with salt and pepper. Garnish the cauliflower soup with some parsley.
